- As a baker and general lover of bread I’m really tired of the gluten free fad. Gluten is what gives good bread its wonderful texture and unless you have celiac disease there is no reason to avoid it especially when the products are less healthy.

Slightly over proofed, 2 day cold ferment, dough got a little warm. Screams for an Onion soup, tomato soup, split pea with some ham hocks.
