A lot of us had 2 displays - one color and one monochrome. Especially if you spent a lot of time in graphics mode but had text on display. The Apple ][ video circuitry combined 2 consecutive pixels as a color (2x1=white, 2x0=white, 10 magenta, 01 green) and it made text hard to read on composite.
