- If we focus only on the importance of being able to do a thing, to be ready to do what businesses "need" then we will always be being outmoded, always be behind the curve, and always be unable to adapt to what comes around the corner.
- Even (good) vocational schools teach a lot more than just the pure skills of their craft. They teach how to think about problems you encounter, how to problem solve, where to look if you encounter something new, not just to be a computer who can recite the part numbers needed.
- We don't take away a biologist's degree because mitochondria were discovered, and we don't stop teaching arithmetic because we invented the abacus/calculator/computer. So no, we don't need a total rethink of education, we need to go BACK to what education is actually FOR. Encouraging thinking.

- Yes, sorry! There are lots of kinds of yeast, but most of them don't really make great beer. Pichia is one our neighbor lab that did cell cycle research used a lot. So we figured, "why not?" SOUR NASTINESS.

- I was, however, sad to discover that lab yeast (if you're not specifically working on fermentation/etc) is weak as hell and makes sucky bread and worse beer. Very disappointing. And Piccia beer is flatout GROSS AS HELL.

- Mix it all up, knead it to get it so it hangs together (gluten developed) then let it rest (rise) during which the yeast eats the sugars and farts out gas that makes the bubbles you see in your bread. Sometimes you knead a little more, let it rest some more. Then you bake it!

- Use fresh yeast if you can. If not, you can go back to older methods where you let the yeast "bloom" with a little sugar/honey and warm water to get it "woken up" which can help if it's aged and not as viable. (What you have to do with non-instant yeast) Be patient, with it and you

- I'm a biochemist! Shep is 100% right! YOU DO NOT NEED TO BE A CHEMIST (of any sort) to be a good baker. Hell, I did my dissertation ON YEAST, and I don't think it helps a wit. And one of the great things about bread is even "failed" loaves usually taste ok and are totally soup-dippable.
