They don't. Humans are bad at fast large vector maths. How am I still having this argument, I thought I was done after beefing all the Google Brain people over this in like 2015.

Suggestively calling things "neurons" does not mean a neural net behaves like a brain. Analogy is bad / non-structural. No particular reason (that I know of) to think of brain operation as convolution of any kind.
