- I think it was mostly that data centers were heavily concentrated in California. It's not so much that the water "disappears" as it is that it massively increases immediate demand in an area where demand is already not well met. This got popularly conflated with "losing" the water.

- FFX is a linear open world. You're locked into the linearity during the story, up until you get the airship, at which point you can go anywhere you want. FFXIII doesn't allow backtracking at all.

- Tidus being a myth isn't a great interpetation. The Aeons are the physical manifestations of the dreams of the fayth. They can interact and participate in the world. Tidus comes from Zanarkand, which is effectively a city-sized Aeon.
